It’s Mango Season!

Aussie Mangoes mean summer.

Quick and easy to prepare and delicious they are a great healthy snack on their own, or can be pared with chicken or prawn, light summer salads, thrown on the barbeque and can be used in cocktails, smoothies and sweet desserts.

Here are three simple recipes to get you started. They are simple and easy to prepare great for your caravan and camping adventures.

Mango Smoothie

Ingredients:

1 cup non-fat milk

1 cup greek yogurt, plain, vanilla or honey

1 ½ cups ice cubes

1 banana (if frozen, leave out some of the ice)

1 mango, about 1 cup chopped

⅛ cup unsweetened coconut

1 teaspoon vanilla

1 tablespoon honey

Method:

Place all ingredients in a blender and blend until smooth, about 3 minutes. Serve with additional coconut and chopped mango if desired.

 

Chicken & Mango Salad

Ingredients:

2 tablespoons olive oil

1 lemon, juiced

1/4 cup flat-leaf parsley leaves, chopped

1 long red chilli, deseeded, chopped

2 1/2 cups chopped roasted chicken, skin removed

2 mangoes, peeled, cut into 1cm cubes

100g mixed salad greens

Method:

Mix all ingredients in a bowl and serve.

 

BBQ Mango Delight

Ingredients:

2 mangoes

2 tbsp white sugar

2 tbsp honey Greek Yoghurt

Method:

Preheat BBQ plate.

Remove cheeks from mangoes and sprinkle the cut side with sugar.

Cook, sugar side down for 5 minutes until golden and caramelized.

Serve with a dollop of Greek yogurt and drizzle with honey.
