BBQ Campfire Kebab Skewer Meat on The Campfire

The key to having a strong flavourful BBQ kebab recipe is marinating your chopped ingredients with cooking oil, seasonings (usually garlic, ginger and onion are great starting points) and acids (sometimes vinegar, lime or lemon).It is best to prepare your marinade at least an hour or overnight soaked up in a sealed container or zip lock bag.

Beef Ingredients

Kebab Ingredients:

  • 2 large sirloin steaks
  • 1 pack of button mushrooms
  • 1 yellow onion
  • 1 pack of cherry tomatoes
  • 1 can of pineapple chunks
  • 2 zucchinis
  • 1 bell pepper (red, green or yellow)

Marinade:

  • 1/2 cup soy sauce 
  • 1/4 cup olive oil
  • 1/4 cup water
  • 2 tablespoons lime juice
  • 1 tablespoon minced garlic 
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon salt

Chicken Ingredients

Kebab Ingredients:

  • 500 g of boneless chicken (breast or thigh)
  • 1 yellow or red onion
  • 1 can of pineapple chunks

Marinade:

  • 1/2 cup olive oil
  • 1/2 cup of chopped coriander
  • 1 tablespoon honey
  • 2 teaspoons minced ginger
  • 1 lime 
  • 1 teaspoon salt

Seafood Ingredients

Kebab Ingredients:

  • 1 can of pineapple chunks
  • 16 large unpeeled king prawns
  • 250 g boneless skinless salmon fillet
  • 250 g boneless skinless white fish fillet

Marinade:

  • 200 ml coconut milk
  • 85 g desiccated coconut
  • 1/2 cup olive oil
  • 1 lime (cut into wedges for serving)

Easy Step By Step

The step by step instructions is applicable to any of the beef, chicken or seafood ingredients above.

  1. Chop your kebab ingredients into medium pieces.
  2. In a large mixing bowl, combine your kebab and marinade ingredients. Mix well and leave it sitting in a sealed container or zip lock back for at least an hour or 24 hours.
  3. Assemble your skewer. Make sure to get the campfire going while preparing in this step.
  4. Grill the skewers and turn occasionally for approximately 6 to 10 minutes.
