Corn Fritters for the Kids
Ingredients:
- 1 cup self-raising flour
- 1 tbs chicken salt reduced stock powder
- 2 eggs
- 1/2 cup milk
- 420 g corn kernels
- 1/4 cup chives (chopped)
- oil (for frying)
Equipment:

- large mixing bowl
- fork

Method:
- In a large mixing bowl, put flour and chicken stock powder and make a well in the centre.
- Add eggs, milk, corn and chives. Use a fork to mix the combined contents thoroughly.
- Heat a little oil in a non-stick frying pan and drop ¼ cup of fritter mixture into the pan. Cook for 1-2 minutes, each side, until golden and cooked through. Repeat with remaining mixture.

Cheese, Bacon & Egg Burrito
Ingredients
- 8 slices bacon
- oil
- 8 large eggs
- 1/3 cup milk
- 1 tbs butter
- salt
- ground black pepper
- 4 large flour tortillas
- 1/2 cup shredded cheddar cheese
- 1x ripe avocado
- hash browns (optional)
- tomato or barbecue sauce (optional)
Equipment:
- camping stove
- fry pan
- paper towel
- medium mixing bowl
- fork
- spatula
- knife and chopping board
- plates (for serving)
Method:
- In a large fry pan, heat a little oil over medium heat and fry the bacon until the edges are crispy. Until cooked, place the bacon over a paper towel on a plate to drain out the excess oil.
- With the leftover bacon fat and oil on the fry pan, fry the hash browns.
- In a medium bowl, add eggs and milk and stir the contents with a fork. Then pour the contents over medium heated fry pan. Stir occasionally until soft curd form. Season with salt and pepper.
- Assemble burritos: In the centre of each tortilla sheet, layer on hash brown (optional), scrambled eggs, cheese, 2 slices of bacon and sliced/mashed avocado. Fold in the two sides and roll up tightly.
- You can serve it with tomato or barbecue sauce.

Halloumi Sandwich
Ingredients:
- milk bun OR any bread slice of your preferred choice
- 1 tbs butter or oil
- 2 slices of halloumi cheese
- 1 egg
- 3 tbs mayo
- chopped shallots (alittle bit)
- salt
- grounded black pepper
- sriracha (optional)
Equipment:
- camping stove
- fry pan
- small bowl
- fork
- spatula
- knife and chopping board
- plates (for serving)
Method:
- Toast your milk bun or bread slice in a fry pan. Set aside.
- In a fry pan, heat your oil or butter until melted. Fry the halloumi cheese on each side until golden brown in spots (~ 3-4 minutes each side). Set aside.
- Heat the remaining oil or butter until melted in your fry pan. Fry the eggs sunny side up.
- In a small bowl, mix together the mayo and srirarcha (optional).
- Assemble sandwich: Spread the mixed mayo and sriracha on the cut surface of your bread, layer on the halloumi cheese, egg, chopped shallots, and a sprinkle salt and pepper.

Banana Pancakes
Ingredients:
- 1 ripe banana
- 1 egg
- 175 g self-raising flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 125 ml milk
- oil or butter
- maple syrup, honey, chocolate (optional)
- fruit (optional)
Equipment:

- fry pan
- large mixing bowl
- fork

Method:
- Peel the ripe banana and chop into pieces.
- In a large bowl, mash the chopped banana pieces. Add egg, flour, baking powder, cinnamon milk. Stir the combined contents thoroughly with a fork until you have a batter.
- In a fry pan, heat your oil or butter until melted even all over the skillet surface.
- Add 2 tbsp of your pancake batter mixture to the fry pan. Cook for 2-3 minutes until golden before flipping over.
- Once cooked, serve the pancake with fruits or toppings of your choice (maple syrup, honey, chocolate)
